Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  • Shred the zucchini using the large holes of a box grater. Do not peel or squeeze out the moisture.
  • In a large bowl, whisk together the melted butter, eggs, brown sugar, and vanilla extract until smooth.
  • Stir the shredded zucchini into the wet ingredients.
  • Add the flour, baking powder, and salt. Mix just until no dry streaks remain.
  • Fold in the chocolate chips, reserving a small handful to sprinkle over the top.
  • Spread the batter evenly into the prepared baking pan and sprinkle the remaining chocolate chips on top.
  • Bake for 25–30 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out with a few moist crumbs.
  • Cool completely in the pan before cutting into bars.
  • Slice into squares and serve.
