Ingredients
  

Peach Filling

  • 2 cups diced peaches fresh, frozen, or canned, drained
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter

Egg Rolls

  • 8 egg roll wrappers
  • 1 large egg beaten
  • Vegetable oil for frying or cooking spray for air frying

Optional for Serving

  • Cinnamon sugar
  • Vanilla ice cream
  • Whipped cream
  • Caramel sauce

Instructions
 

  • Melt butter and cook peaches with brown sugar, cinnamon, and nutmeg for 3–4 minutes.
  • Stir in the cornstarch slurry and cook until thickened. Remove from heat and mix in vanilla. Cool for 10 minutes.
  • Place 2 tablespoons of filling in the center of each egg roll wrapper.
  • Fold, roll tightly, and seal with beaten egg.
  • Cook using your preferred method:
  • Air Fry: 375°F for 8–10 minutes, flipping halfway.
  • Deep Fry: 350°F for 2–3 minutes until golden.
  • Pan Fry: 3–4 minutes per side until crispy.
  • Coat warm egg rolls with cinnamon sugar.
  • Serve immediately with vanilla ice cream or whipped cream.

Notes

Let the filling cool before rolling.
Drain canned peaches thoroughly.
Don't overfill the wrappers.
Seal edges well to prevent leaking.
Cook in batches for the crispiest results.
Best served fresh and warm.
