Ingredients
  

  • 3 medium ripe peaches peeled and diced (about 2 cups)
  • ¼ cup finely diced red onion
  • 1 jalapeño seeded and finely minced
  • ¼ cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • ½ teaspoon kosher salt

Optional Add-Ins

  • ½ red bell pepper finely diced
  • 1 teaspoon honey if peaches aren't very sweet
  • ½ avocado diced
  • Pinch of ground cumin
  • 1 small mango diced
  • ½ cup diced cucumber

Instructions
 

  • Peel and dice the peaches into small, even pieces.
  • Finely dice the red onion and jalapeño, then chop the cilantro.
  • Add the peaches, onion, jalapeño, cilantro, lime juice, and salt to a mixing bowl.
  • Stir gently until everything is evenly combined.
  • Taste and adjust with more lime juice, salt, or jalapeño if desired.
  • Let the salsa rest for 10 minutes to allow the flavors to meld.
  • Serve with tortilla chips or as a topping for tacos, grilled chicken, fish, or shrimp.

Notes

Use ripe but firm peaches for the best texture.
Pat very juicy peaches dry with paper towels to prevent watery salsa.
For a milder salsa, remove all the jalapeño seeds and membranes.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Stir well before serving, as the peaches naturally release juice over time.
