  • 1 teaspoon vanilla extract
  • 2¼ cups 281 g all-purpose flour
  • ¼ teaspoon salt

  • Finely chop the pecans and set aside.
  • Beat the softened butter and ½ cup powdered sugar until creamy, about 2 minutes.

  • Bake for 12–15 minutes, until the bottoms are lightly golden and the tops are set.
  • Cool on the baking sheet for about 5 minutes.
  • Gently roll the warm cookies in powdered sugar.
  • Transfer to a wire rack and cool completely.
  • Roll the cooled cookies in powdered sugar a second time before serving.

Notes

Use softened, not melted, butter.
Finely chopped pecans give the cookies a more even texture.
Avoid overbaking; the cookies should stay pale on top.
Store in an airtight container at room temperature for up to 1 week.
Freeze baked cookies for up to 3 months.
For a snowy finish, add the second powdered sugar coating after the cookies have cooled completely.
