Ingredients

  • 1 cup 226 g unsalted butter, softened
  • 1 cup 200 g granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2¾ cups 345 g all-purpose flour

  • Slice the dough log into rounds about ¼ inch thick and place them about 2 inches apart on the baking sheets.
  • Bake for 10–12 minutes, until the edges are set and the bottoms are lightly golden.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Chill the dough thoroughly before slicing.
Roll the log tightly to prevent gaps between the colored layers.

Freeze the dough log for up to 2 months or baked cookies for up to 3 months.
