Equipment

  • * 8x8-inch baking pan
  • * Parchment paper
  • Large mixing bowl
  • * Whisk
  • Silicone spatula
  • Fine-mesh sieve
  • Measuring cups and measuring spoons
  • * Cooling rack
  • Sharp knife for slicing

Ingredients

  • ½ cup 113g unsalted butter, melted
  • 1 cup 200g granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup 122g 100% pure canned pumpkin purée
  • ¾ cup 90g all-purpose flour
  • cup 40g unsweetened cocoa powder
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt

Instructions

  • Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  • In a large mixing bowl, whisk together the melted butter and granulated sugar until glossy and well combined.
  • Add the eggs and vanilla extract, whisking until the mixture is smooth and slightly pale.
  • Fold in the pumpkin purée until fully incorporated.
  • Sift the flour, cocoa powder, pumpkin pie spice, and salt directly into the wet ingredients.
  • Gently fold everything together until no dry streaks remain. Do not overmix.
  • Spread the batter evenly into the prepared baking pan and smooth the top with a spatula.
  • Bake for 22–25 minutes, until the edges are set and the center is just slightly soft.
  • Cool completely in the pan before lifting out, slicing into 12 brownies, and serving.

Notes

Use 100% pure pumpkin purée, never pumpkin pie filling, as pie filling contains added sugar and spices that alter the recipe.
Mix the batter gently and only until combined to keep the brownies soft and fudgy. Overmixing develops gluten and creates a tougher texture.
Remove the brownies from the oven when the center is just set. They will continue to cook slightly as they cool.
Let the brownies cool completely before cutting for clean, neat slices.
For an extra indulgent dessert, top cooled brownies with cream cheese frosting, a dusting of powdered sugar, or serve warm with vanilla ice cream or caramel sauce.
