Pumpkin Protein Balls

Easy no-bake pumpkin protein balls made with pumpkin puree, rolled oats, nut butter, protein powder, maple syrup or honey, and pumpkin spice. A quick, filling snack that's easy to customize.

Ingredients
  

  • ½ cup pumpkin puree
  • 1 cup rolled oats
  • ½ cup almond or peanut butter
  • ¼ cup vanilla or unflavored protein powder
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • Pinch of salt

Optional: mini chocolate chips, flaxseed, chia seeds, shredded coconut

Instructions
 

  • Add all ingredients to a large mixing bowl.
  • Stir until fully combined.
  • Taste and adjust sweetness or spice if desired.
  • Cover and refrigerate for 30 minutes.
  • Scoop approximately 1½ tablespoons of mixture.
  • Roll between your palms into balls.
  • Place on a parchment-lined tray.
  • Refrigerate for another 15 minutes before serving.

Notes

Use pumpkin puree, not pumpkin pie filling.
Add more oats if the mixture is too sticky.
Add pumpkin puree a teaspoon at a time if the mixture is too dry.
Chill the mixture before rolling.
Use maple syrup or agave for a vegan version.
Use certified gluten-free oats for gluten-free protein balls.
Use sunflower seed butter, tahini, pumpkin seed butter, or soy nut butter for a nut-free version.
Store refrigerated for 5–7 days.
