- 1 cup granulated sugar
- 1 cup water
- 2 tablespoons pumpkin puree
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cloves
- 1 teaspoon vanilla extract
- Pinch of salt
Combine the sugar, water, pumpkin puree, cinnamon, nutmeg, ginger, cloves, and salt in a small saucepan.
Heat over medium, whisking until the sugar dissolves.
Reduce the heat and simmer for about 7 minutes until slightly thickened.
Remove from the heat and stir in the vanilla extract.
Strain through a fine-mesh sieve if you prefer a smooth syrup.
Cool completely, transfer to a clean jar, and refrigerate.
