Cream butter and sugar in a small bowl until light and fluffy (about 2 minutes by hand).
Mix in egg and vanilla until fully combined.
Whisk together dry ingredients (flour, baking powder, salt, strawberry powder) in a separate bowl.
Fold dry into wet until just combined. Don’t overmix, or cookies will be tough.
Chill the dough for 15 minutes if it feels too soft to handle.
Shape into 2-3 small balls, place on a lined baking sheet, and flatten slightly.
Bake at 350°F for 8-10 minutes until edges are set, but centers look slightly underdone.
Cool completely before frosting or glazing.
